Whether eaten by itself or used in one of the recipes,

4 Apex Orchard’s apples, cored
and sliced
½ c. water
Heat apples and water
over medium heat in a covered saucepan until soft.
Process through a Foley Food mill or other straining
device. Sugar and spices to taste.
Use
a mixture of our apples to create your own special
flavor!
Paper
Bag Apple Pie
|
1 unbaked 9” pastry shell
6-7 c. peeled, sliced Apex Orchard’s apples
½ - ¾ c. sugar
2 tbsp. flour
½ tsp. nutmeg
|
2 tbsp lemon juice or 1 tsp. cinnamon
½ c. flour
½ c. sugar
½ c. margarine
|
Mix apples, sugar, flour, nutmeg and lemon
juice together and put into pie crust. Mix the flour,
sugar and margarine together and
sprinkle over apples to cover top.
Put whole pie into large brown
paper bag. Fold ends over and fasten with
paper clips. Bake at 400˚
– 425˚
for 1 hour

1 pint blueberries
2 c. sliced, peeled Apex Orchard’s apples
1 tbsp. lemon juice
½ c. light brown sugar
1 c. all purpose flour |
¾ tsp. salt
¾ c. sugar
1 tsp. baking powder
1 egg slightly beaten
1/3 c. melted butter
½ tsp. cinnamon
|
Butter a shallow 1 ½ qt. baking dish and put
in berries and apples. Sprinkle with lemon juice and brown
sugar. Mix flour, salt, ¾ c. sugar, baking
powder, egg until crumbly. Sprinkle over fruit. Top with melted butter and cinnamon
Bake at 350 for 35-40 minutes. Serve with whip cream
Molded
Cranberry Waldorf Salad
2 c. cranberry juice cocktail
1 pkg. lemon flavored gelatin
¼ tsp. salt
|
1 c. chopped unpeeled Apex Orchard’s apples
¼ broken walnuts
½ c. chopped celery
|
Heat 1 c. cranberry juice to boiling and
dissolve gelatin in it. Add rest of juice and salt. Chill until partially set. Add apple, celery and nuts.
Pour into mold and chill until firm

1/3 c. sugar
1 tbsp. cornstarch
¼ tsp. ground cinnamon
4 c. sliced Apex Orchard’s peaches
1 tsp/ lemon juice

3 tbsp. shortening
1 c. all-purpose flour
1 tbsp. sugar
1 ½ tsp. baking powder
½ tsp. salt
½ c. milk
|
Heat oven to 400.
Mix sugar, cornstarch and cinnamon
in saucepan with Apex Orchard’s peaches and lemon juice. Cook, stirring constantly, until
mixture thickens and boils. Pour into a casserole and keep in
hot oven. Mix shortening, sugar, baking
powder, and salt until mixtures resembles fine crumbs. Stir in milk; drop by spoonful into
the hot peach mixture
Bake until nicely browned, about
25-30 minutes

Aunt
Cathryn’s Applesauce Cake
|
1 c. shortening or ¾ c. oil
2 c. sugar
2 eggs
3 c. flour
1 tsp. nutmeg
1 tbsp. Cinnamon
1 tsp. salt
|
1 tsp. cloves
1 tbsp. baking soda
2 ½ c. Apex applesauce
2 tbsp. corn syrup
1 c. raisins
1 c. nuts
|
Cream shortening, sugar and eggs.
Mix dry ingredients in separate bowl.
Add dry ingredients and applesauce
Pour into two 8” greased pans.
Bake at 350˚
for about 45 minutes
Applesauce Meat Balls
|
1 lb. ground beef
1 c. crushed corn flakes
1 chopped onion
1 tsp. salt
|
½ tsp. pepper
¼ tsp. garlic powder
1 egg
¾ c. unsweetened Apex applesauce
|
Mix all ingredients and shape into balls. Pour 1 can diluted tomato soup over
all. Bake at 350˚
for 1 hour

2 c. all-purpose flour
4 tsp. baking powder
1 tsp. salt
|
2 tbsp. shortening
2/3 c. milk
7-8 Apex Orchard’s peaches
|
Prepare peaches by peeling, slicing, and
lightly sugaring. Mix dry ingredients in mixing bowl. Work in shortening lightly. Stir in milk gradually. On a floured surface, shape dough
into a large circle and place into center of pie plate.
Bake 12-15 minutes at 425. Slice shortcake in half and layer
with prepared peaches, between and on top. Serve in pie-shaped pieces with
whipped cream
Turkey
and Peach Salad
2 pounds
cooked and diced or pulled turkey meat
1 pound peeled and diced
peaches
3 stalks of celery diced
¼ cup Apex Orchard's cider
vinegar |
1 red onion diced
chopped herbs ¼ cup mayonnaise
salt and pepper

Mix all
ingredients together in mixing bowl. Serve either as a sandwich or on top of ½ cup mixed herbs, chopped,
cilantro, parsley and basil salad
greens. Garnish with peach slices.
Snowflake Apple Cake
3 cups raw
Apex apples, grated or finely chopped
2 eggs well beaten
3 cups sifted flour
¾ cup chopped nuts
|
1 teaspoon each baking powder,
cinnamon, baking soda, salt and vanilla
2 cups sugar
¾ cup vegetable oil |
Mix together flour, baking powder , cinnamon, baking soda, salt,
and vanilla. Combine wet and dry
ingredients. Beat until well blended. Pour
into greased and floured 10’tube
pan. Bake at 350 for 1 hour and 10
minutes.
Apple
Cider-Honey Vinaigrette
|
2 tbsp. Shelburne Apple Company’s apple cider vinegar
1 to 1 ½ tsp. Shelburne Honey Company’s honey
|
1 tsp. finely minced shallot
6 tbsp. olive oil
Salt and pepper
|
Mix vinegar, shallot, and honey and whisk
together. Add oil in slowly, whisking
constantly. Season with salt and pepper.
